The buffalo and elk are fantastic, richly flavored despite being incredibly lean, and totally lacking in any unpleasant gaminess. But our favorite is the Cajun beef strips; the added cayenne acts as a tenderizer and also gives the meat a feisty, spicy kick. June 2006
