At the Gary West Meats Jerky Factory and Tasting Room in Jacksonville, Ore., you can try strips of free-range elk and bison as well as Angus beef in Cajun, teriyaki, and cracked pepper flavors. Warning: You might get some funny looks if you start to talk about the jerky’s "bouquet."
